If it was 512 GBs it would be a better deal, but 256 GBs is not cutting it anymore.

You can use a EGPU and a AMD GPU or a nvidia card for better graphics performance. And you can still use boot camp with these models.
a $1600 desktop computer shouldn’t need a second gpu and a several hundred dollar adapter
