After upgrading to the fourth beta, the Health app has a popup that says the new app features will come in a future update. Data collected during the beta remains available in the Settings app.
Apple is planning to release iOS 27.2 later in October, and the removal of the Health app suggests a launch is getting closer. The HomePod mini 2 that launches on October 30 uses HomePod software 27.2, so the updates will need to come out before that date.

After releasing iOS 27 last week, Apple is already testing a follow-up iOS 27.0.1 update for iPhones, according to MacRumors logs.
iOS 27.0.1 will likely be a minor update with bug fixes and/or security patches.
Shortly after Apple launches new iPhone models, some software bugs are usually discovered as the devices get into the hands of millions of customers around the world. This year, so...

Apple added a new iPhone Handoff feature to iOS 27 that allows you to switch between two iPhones while using the same phone number on each device. T-Mobile and Deutsche Telekom are the first carriers to offer iPhone Handoff, and Apple said Verizon and EE will add support later this year, but AT&T is noncommittal about the feature.

What is up with Apple and their obsession with announcing new features that aren't ever released for months or years after the keynote? Like why is this a thing now?
I guess people don’t pay attention. Apple said from the beginning that the new health app will be in 27.2 betas, but wouldn’t make the public release. The public release is very soon with the new home products coming out.
Bad day for Apple; HomeView seems a bit pointless and overpriced for what it is, with the wall-mounted version being more expensive than the tabletop version despite losing the base, as you need the wall-mounted accessory on top.
The 4th Gen Apple TV 4K is ridiculously overpriced, again not taking into account the price hike of the old model, which is now almost double the cost.
If you don't take into account the old HomePod Mini price hike earlier this year as well, the HomePod Mini 2 is now 50% more expensive.
And for the icing on the cake, Apple removed the new health app while it was still in beta and turned the Music app black and white. What the hell is Apple doing?

True, yes, but you'd think they'd keep it in for more testing until 27.2 hits RC and then pull it before release.

Cook lived for the publicity. The new CEO needs to get things in order. The honeymoon is very short.
