Surely update the existing HomePods to do the same thing right?

I suspect the lower latency enabled by Wifi 6E (the 1st Gen mini is Wifi 4) is the gating item here. The older HomePods can use AirPlay audio, which is fine for something like a movie where a slight audio delay can be compensated for by slightly delaying the video feed, but that doesn't work well for real-time / system audio.

WiFi 4 operates on the 2.4GHz radio frequency band, which is very congested — most of your WiFi devices are on that band, as are those of your neighbors (which becomes a huge problem if you live in a densely populated place, especially tightly packed apartments in cities), and common household devices like microwaves also cause interference on that specific band.

Newer WiFi versions are able to operate on additional radio bands like 5GHz and 6GHz, which are less crowded, and also have higher bandwidth (meaning you can send more data), although usually at shorter distances. If your iPhone or MacBook is connected to your WiFi over those additional bands, running the microwave for 20 minutes won’t interrupt your Internet or degrade the quality of your Netflix stream, which is a very common experience for people on the original 2.4GHz band.

WiFi 6 supports 2.4 and 5, and WiFi 6E also adds support for 6. As it is the newest addition and therefore the least frequently used, 6GHz experiences less interference, and can send more data faster and more reliably.

The original HomePod mini is based on the chip from an older Apple Watch model that can only communicate on 2.4GHz.

The new HomePod mini 2 is able to communicate on 2.4, 5 or 6 (it picks the least busy one), and this means that your Mac is able to send audio to the HomePod quickly enough that audio and video don’t fall out of sync.

Apple cares deeply about the user experience, and the WiFi on the older HomePods is not fast enough to provide the lag-free experience they want users to have.

Things like system sounds or real time alerts can’t have a delay. So while you can play a song on the older iPod mini’s, they aren’t fast enough for real time events. The new mini’s have faster WiFi antennas so they can be used for pretty much anything (if I am understanding correctly).

The previous-generation HomePod mini can also be used as a Mac's speaker via AirPlay, but it cannot be set as the default audio output. AirPlay can also introduce audio latency.
